Josef Zotter has created a fruity mango ganache made from mango mousse, mango chocolate and a little cashew nougat – a mixture that gets its wings through a splash of lemon. The second layer is made up of milk chocolate, almond nougat and caramel chocolate, seasoned with fragrant mace. A delicious aroma – fruity, spicy and citrus-fresh. It comes covered in a dark chocolate with 70% cocoa content.
